i would say, in this order:

1)original resident evil 1, the added difficulty is what made the game scary. obviously you shouldn't rely on emulator saves. also, the only issue here is the censored intro but it's only like a minute, you can just look it up on yt before playing.
2)DS. this is if you want the original + quality of life changes. the addition of the knife does make it easier but it's still nice. play classic mode then rebirth, which is gonna give you some extra replay value too. if you own an actual ds this has even more value and could even be number 1, because the comfiness of playing it in bed is unmatched.
3)ps1 director's cut.
4) the PC port, just because of the easier difficulty. sad.

Dualshock version is actual shit, never play it. sega saturn version could get a number 2 or 3 spot in theory, but IIRC all the audio was in a lower quality due to console limitations over ps1, which is not listed here.

It's not the hardest game in the world but playing it again for the first time since childhood, as Chris, on the Saturn version which has a double Tyrant battle in the lab isn't a guaranteed auto-win.

The mansion is deliberately designed to kill you too. Entering the shotgun room as Chris without the broken shotgun is an inescapable death trap.
