Tomb Raider 1 is the easiest to begin with, it's primitive for better and for worse. It's decently diverse in its setting.
Tomb Raider 2 is fun but is harder from the get-go.
Tomb Raider 3 is extremely difficult and unfair, but has the most varied set of levels. Play on PC for anytime saves.
Tomb Raider 4 is great, polished and also easy enough to begin with, but it's Ancient Egypt only, which I love but some might find tiresome after a while.
Haven't played Chronicles, but I hear it's good though more of the same.

I recommend playing the first level of TR1, TR2 and TR4 to get a taste for what you like.
