Heres is what the game will look like under the MMC1 mapper which was the stander NES mapper at the time (along side the UNROM mapper).

The NES with a extra 8KB of ram can run a 2th background layer, heck very few games like MageMan 2 when your asking for a password shows this (yet megaman and the text do get removed, but because of ram issues, almost all games only used 1.

The MMC2 & MMC4 (they're almost the same chip, but the MMC4's banks are bigger) can do bigger sprites (32x32), Punch Out uses this to display the big characters when Famicom Wars and the 2 Fire Emblem used the chip to have a bunch of sprites on screen at once, SNK might of used the MMC4 to show off the big characters.

You did not read the whole interview, they said that the hardware was made in the early-mid 90s (some of their staff came from Sega by the way) and that there was a 68030 at 33Mhz to power that extra video power, also more ram.
