I think the lack of DK in 2 actually made the game feel more epic; that, the soundtrack, the enemy theming, level theming, and just overall improvement in quality, are all aspects that combined to make for a more grand adventure. Diddy and Dixie make a nice team, too.

The problem is that they didn’t bring DK back in 3 to team up with Dixie.

The DKC games were made by autistic brits who thought each new product needed a new character for marketing purposes. They grew up with children's shows and Doctor Who which routinely replaced main characters over the years to "keep things fresh".

Back in the '90s having girl protagonists was considered cringe so all the marketing doubled down on Kiddy, because baby character were also in due to the popularity of baby spin-offs and Rugrats. I even remember adverts claiming this was Kiddy's adventure specifically.
