Starting out, paladin can tank, heal, buff, deal damage with physical (and later on Ivory Slash), and generally has few weaknesses with proper stat allocation.

Other classes that you unlock later can have good utility and damage as well, like Blue Mage (who can also heal if you learn white wind), and Black Knight (who regens MP with melee attacks and can paralyze enemies and taunt for crowd control).

Honestly, play what looks interesting. Everyone wants more white mages, who does decent damage due to the bow damage mechanics (and later getting Holy at lvl 55).

Only one I suggest maybe holding off on is Dark Knight, which is an active load on the party if played improperly (due to most darkblade abilities costing HP), and it's niche (massive damage dealing) is easily filled by other classes at higher levels. It's still a fun class but expect to start getting passed over for groups going against Zeromus or Gilgamesh.[/spoiler
