I don't have much experience with J-Win98, only ever used it in PCem, but it seems to not be too far off from the regular English version of Win98. Anything that would be good for a standard Win98 build should also apply for J-Win98. Haven't tested it much, but English games seem to be just fine on J-Win98 as well (only tested Need for Speed II SE and Interstate '76 on it)

There can be a slight difference, but I think that's more down to individual cards having a slightly different sound to begin with.
WinWorldPC is great for finding specific versions of old operating systems. Helps out so much.
The MMX 166 is probably your best bet there, then.
