There are 2 ground pins on a SNES/N64/GC multi-AV connector. It's very common on cheap cables to wire only one of them.

Also virtually every Composite + S-Video combo cable you can find re-uses the composite wire for one or both of the S-Video signals and results in interference in the picture.
