These and almost every other fighting game. Even in those with missing frames of animation, fighters are all about building skill and being able to practice and play every day without it costing a quarter every few minutes makes them instantly far better than their arcade counterparts.

Various other puzzle games, Panel De Pon and it's variants is another great one.

Fighters, there are still people working on getting better at KoF and Street Fighter 2. Because they're player vs player there's always room for improvement.

Rougelikes are one of the most complicated and strategically deep genres there is.

Hands down it would either be a King of Fighters '98 or 2002 machine. Picking which one would be hard though.
