Depends on if you would rather play a game more in line with either 8 or 9.

If you would really like to do the class customization and party of blank slates, I'd actually recommend 3.

If you'd rather play a game with more fleshed out characters and a personal story, 4 and then 5.

The DS remake is probably the best way to play it, unless you can stomach mobile. Only reason I even mention it is because party chat was put back into those versions after being arbitrarily removed from IV DS. V and VI thankfully don't have that problem.
