Some double-barrels have ejectors, some don't, depends on the design. For firing both barrels, most double-barrels will not really tolerate you doing that (it batters the firing mechanism), though there are some which will and are actually designed and built for that.
There's nothing that prevents one from making or maybe even modifying a double-barreled shotgun with ejectors to also fire both barrels with one trigger. Just requires enough effort and good gunsmithing.
