OP here, I digitize all my photos with a Game Boy Printer emulator called a "Bitboy." It spits out whatever would be sent to the Printer into a BMP (pic related but a BMP file). I think these raw BMPs look great except they should be scaled up. That said, when there's a pic I really like, I go through the trouble of capturing it on the real LCD, cuz it looks cool.
If you want to digitize photos, don't buy a Bitboy. It works perfectly, but there are much cheaper alternatives and the Game Boy modding scene is growing all the time.
