In my opinion:
FF1: NES, WonderSwan and PS1
FF2: NES, WonderSwan and PS1
FF3: Famicom or Pixel Remaster
FF4, 5 and 6: SNES
FF7, 8 and 9: PS1
FFX: PS2
FFXI: never played it
FFXII: never played this one either

I like the GBA and PSP ports well enough, but I don't really think they're the best way to play these games. The ports of FF1 & 2 change the gameplay pretty substantially and not necessarily for the better.
The 3D remakes of 3 and 4 that were initially on the DS are interesting. I didn't really care for the remake of 3, but I actually like the remake of 4 quite a bit. I like it a lot more than the 2D remake that was on PSP. I don't think it's the version you should play first, but I think it's worth playing.
I'm not really as picky with 7, 8 and 9 since most of the changes made in later ports are purely cosmetic, but I prefer the look of the PS1 games. I prefer the PS2 version of X because I think the models look nicer than they do in the HD remaster, ironically, but if you play the game on PC you have the option to mod the old models back in.
