You could roll an Inquisitor; multiplayer games tend to be fairly relaxed and loose and most Mage players aren't the most proficient at Mage chess, so you can use your Dispel Magic (cats at 2x the paladin level) and True Seeing to make it much easier for your friends to simply blast away. Other kits are good too.
>barbarian
Best purely martial tank in the game with Hardiness and Defender of Easthaven, but you might be stepping on your Fighter/Cleric's toes if he chooses to do that (Armor of Faith + Hardiness + DoE is similar, although dispellable).
>Ranger
Archer is insane DPS throughout the entire game and takes all the bows that your party doesn't have a reason to use because Bows are generally slightly underpowered damage-wise, outside of BG1 -- UNLESS you are an Archer, in which case you're insanely broken the whole way through. The raw amount of physical power means easy fights with meatshields like the final bosses.
>Druid
Either go multi or dual-class yourself or play a Totemic Druid or Avenger if you want a more supportish class. Totemic Druid is an insane summon from BG1 start and later you have insane support with Insect Plague, elementals and Nature's Beauty.
>Sorcerer
Will either step on the Mage's toes or compliment him, depending on how good your Mage player is. All of the scrolls will go to the Mage nevertheless for farming XP. Sorcerers >>> single-classed Mages always. More arcane is never a bad idea, although early BG1 you guys might die a lot, co-op MP games aren't the most coordinated.
>Shaman
Don't. It's shit.
>Bard
Blades are stronger frontliners and Skalds are better supports. Your party is too small to utilize a Skald properly, and depending on what friend 4 picks you might have too few physical damage dealers to leverage it. Blade is plenty of support. Jester is fun to look at but not micro-intensive.

To emulate most of EE functionality you take these:

Widescreen Fix (I find it kinda janky myself but it's there)

The Tweaks Anthology (specifically: components "Increase Ammo Stack Size", "Add Bags of Holding")

I don't think there's a mod that lets you add the zoom-in functionality, the "loot bar" and the new journal, although most anons don't consider these to be good features (zoom-in makes the game look "blotchy", loot bar is potentially exploitative by allowing you to pick up loot from beyond LoS of monsters beyond fog of war), they're still QoL that I'm not aware is replicated in any BG2 mods, but I've not been hanging around SHS/G3 in a while.

To "downgrade" the EE to remove loathed story content, download these mods:

Yes, they're well worth playing. Base-game of NWN2 is probably the worst of this bunch, but still servicable. NWN2: Mask of the Betrayer in particular strikes a positive chord with people who loved Planescape: Torment.

It's literally my favourite series of all time. I dug through its files for personal modding, troubleshooting, and even used it for an academic purpose. I've written articles on it for a defunct RPG website. I replay it very often. I lurk /vr/'s IE threads to help people's optimization or modding woes.
You can't possibly accuse me of not liking Baldur's Gate enough, I assure you.
It's just that the game shouldn't be exalted as some unachievable standard. I've hung around enough RPG communities to know that the most curmudgeonic and rigorous of them may even consider Baldur's Gate to be adulterated casualized shit popamole for children, and this is the attitude I see seeping through the cracks of the "but this game had SOUL" argument, except applied to other games. For some, the pinnacle was Dark Heart of Uukrul or Champions of Krynn.
A CGW review of BG1 lamented how it was a flashy, but overall weaker game than its precedessors, completely tone-deaf towards the RPG boom and legacy it was supposed to bring about. The review had its merits, and it's obvious upon re-reading the issue that the actual score was given to the game by editors (BG's adverts were prominent in the magazine) and not by the reviewer herself.
When you claim BG2 is "as close to a perfect game" as possible, you're overlooking its many flaws. For some, perceivable flaws like the relatively low impact of mental stats, general lack of choices and consequences or meaningful evil paths, or even reliance on RTwP to deliver a tactical experience - those are a bigger deal.
There are quite a few things modern games inspired by BG2 have done better than it did. That doesn't take away from BG2's undeniable footprint on the industry. Citing subjective factors like "silliness" or "lack of depth" is not sufficient considering BG2 can be easily accused of such as well.

Compared to BG, it's even more oriented around combat and, although the writing is more sparse, it's also more mature and less jokey than the one featured in BG. Lack of companions and their potential zany personalities and conflicts reinforces this.
It has, IMHO, the most beautiful graphics and sound design of all the games, with the best voice acting overall, amazing portraits (I always backport these into BG) and most interesting locations.
It's generally been a go-to game for fans of RTwP combat and munchkinnery for a long time (and a lot of people dropped it when they weren't motivated by the overarching theme of a hack'n'slash campaign), but BG sorta surpassed it on that front due to the Sword Coast Stratagems mod squeezing the most out of the fairly limited AI scripting available in IE.
All in all, a worthy title to play, particularly if you just finished Baldur's Gate and feel like your favourite parts about the game were the combat.

IWD2 is pretty good too, but not retro. It runs off the 3rd edition of D&D proper, and as such it has even more complexity involved for powergamer types. It's a bit harder to get ahold of nowadays, but it's a quality game as well; it didn't get much recognition because, mainstream-wise, it released next to Morrowind and NWN, a lot of people felt IE was outdated, Interplay was going bankrupt, and grognards thought Black Isle Studios (generally revered as masters of worldbuilding and writing) can do better than a hack'n'slash game whose plot was reportedly written by J.E. Sawyer alone in 48 hours, presumedly on the back of a pizza box.
