You can just skip them and come back to them later. It feels really good when you come back to Scythe map30 after a year or two of playing other wads and improving and finally beating it on UV. It's the feeling of crushing something that once was too powerful for you, an unforgettable experience.

Death Anon? Play Scythe 1. Blast through episode one (maps1-10). If it feels too easy and/or if you like the maps enough, try to pistol start them.
Episode 2 (maps 11-20) will be a step up in difficulty, and episode 3 is a dramatic step up, even harder than Eviternity, but the maps are a fraction of the size. If you decide to tackle 'em, do it on easy or medium difficulty before trying Scythe 1 Episode 3 on Ultra-Violence difficulty.

Oh also I encourage you to play Scythe 1/2 in Crispy Doom. Add PerK's Hi-Res SFX mod if you want. I generally play with that on at the very least these days, since it never conflicts with anything. You can also add Doom Sprite Fix, Smoothed Doom, Vanilla Doom Smooth Weapons, or Black Ops (same thing but black gloves and right-handed). Just some suggestions. Only add one sprite mod and one gun mod, as if you load two gun mods for example they will conflict and bug the game. And don't add them to Scythe 2 since it has custom things already.

Scythe is known for smaller than average maps. Don't be fooled by how easy the first few levels are. The map set progressively ramps up in difficulty until most players are simply unable to beat the final level on ultra-violence difficulty. It's divided into three episodes. Episode 1 is easy. Episode 2 starts off pretty difficult (maps 11 and 12, although map 12 is mainly only difficult because it's so dark it's hard to see), but after that, it's medium difficulty. Episode 3 is very difficult but luckily most of the maps are very short - you're advised to play episode 3 on skill 3 (Hurt Me Plenty) because there is a massive spike in difficulty on UV.

Also remember that BTSX had a TEAM of people working on it; it wasn't just one person.

If a WAD is vanilla-compatible like Scythe then I don't mind it not being decorated because it will look great in Chocolate Doom anyway. My favorite examples is map 27 of Scythe. It's undecorated by today's standards but the map still plays amazingly well; it's my favorite Scythe map. Try to beat it pistol-start on UV with saves if you've never played it before.

If a WAD is limit-removing then I expect a little more effort put into decoration. I think maps 03 and 05 of DBP20 are good examples of how little decoration you can get away with on limit-removing ports. The other maps of that PWAD have tons of decoration by comparison (and as a result look great in GLBoom)

If a WAD is Boom-compatible then I expect more - look at maps 03 and 04 of Lunatic

I can't stop grinding Scythe E1 UV-Fast. I brought my time down to 18:55 using a route I came up with myself just by playing, then I looked at the world record (13:57 by 4shockblast) and learned a ton of ways I can reduce my time further, like using the chainsaw throughout map 01 instead of the pistol, punching out pinkies on EVERY map that has berserk, and some minor pathing improvements like going straight for the switch on map 05 instead of attacking the explosive barrels first. All of this started because I began posting demos to youtube of PWADs that lacked gameplay videos, but now I can't stop trying to perfect my runs so that I'm not wasting the viewers time with mediocre runs. I'm never going to get to play any new PWADs because I'm going to spend over a month on each PWAD that I am replaying. At least I'm having a lot of fun doing it.
