The audio outputs on my many consoles are plugged into a 6.1 surround setup.
I also plugged in a DVD player, a VCR and a LaserDisc player into my surround setup.
The PS2 and Xbox are the only consoles in my CRT setup which output digital audio.

Many games are only in 4.0 but they still sound great, as well as some games in 5.1, too bad the only 6.1 games I can think of are Final Fantasy: The PS2 Trilogy (X, X-2 and XII) which is not retro.

But I do have some 6.1 LaserDiscs (like Star Wars: Episode I - The Phantom Menace), as well as some DVDs with 6.1 like Star Wars: The Complete Saga, The Lord of the Rings Trilogy, The Studio Ghibli Collection, and even some which were downgraded to 5.1 in the Blu-ray versions like Gladiator and Enchanted (which is weird, since the Disney DVD and Disney Blu-ray versions of Enchanted came out simultaneously, at least in the US, and the Disney DVD of Enchanted also came with an exclusive making-of documentary bonus disc if you bought it in Target or if you bought the Japanese 2-Disc Special Edition, the documentary wasn't in the Disney Blu-ray, but the Disney Blu-ray had an exclusive trivia track which wasn't in any Disney DVD version), however, you can restore 6.1 in their Blu-rays by using DTS Neo:6 or Dolby Pro Logic IIx.
The movies I most enjoyed in 6.1 are Laputa: Castle in the Sky, Spirited Away, Howl's Moving Castle, Tales from Earthsea, Ponyo on the Cliff by the Sea, and Enchanted.
Of course, Star Wars and LotR would be obvious pickings.

There are even some TV series in 6.1 like CSI and Samurai Jack, Samurai Jack sounds really great in 6.1, especially in Season 5.
Too bad there is a lack of 6.1 music, the only ones I can think of are the Studio Ghibli soundtracks and Taylor Swift's music, though I really enjoyed watching and listening to Taylor Swift: Speak Now - World Tour Live in 6.1 surround sound, and also Joe Hisaishi in Budokan, especially when they performed the My Neighbor Totoro medley near the end.
