Moneybags takes your gems all throughout Spyro 2 and 3. In Spyro 3 though he's also planning to sell a Dragon Egg at the end of the game, which is the final straw for Spyro there, thus the chase for it, which you get at the end. Getting back your gems by torching him repeatedly with a nice sense of cathartic vengeance is just a really nice added bonus. Especially since in the second game, Hunter's the one that wallops him into giving your gems back.
