Definitive version? Rayman DOS (its the only hardcore way to play)
Best sequel? Rayman 2 before they jumped the shark with Rayman 3 and raving shit turds 17.

Rayman was amazing, my Mom bought it at randomly for me when I was very young. I played the shit out of it on a keyboard and did manage to beat it eventually too. I'm glad that I was able to play that and simcity on dos when I was younger.
