While it's true that the familiarity of the characters and setting are a big part of the appeal, I think Butoden 2 (and 3) are interesting games as far as 2D fighters go. The dash move and the split-screen mechanic give it a different approach at the genre that I find compelling.
By the way, Butoden 2 is one of the favorites, Butoden 3 often gets ignored, and maybe rightfully so, because it's pretty barebones and the roster is just OK (fat Boo but not Super or Kid boo, no fusion characters, it's only the beginning of the Boo saga, but the explanation for that is that it came out right while Boo saga was going on in the manga/TV).
I've never seen people praise UB22 too much, however, it's often described as disappointing and I agree. OP says it's faster than the Butoden games, maybe OP didn't play Butoden with the turbo mode enabled. I find UB22 clunkier than Butoden 2 or 3, by far, and the removal of the split-screen is also a downstep. Its only good things are the OST and the roster, not even the stages look good.
Oh btw you can't play as Goku on Butoden 2 without using a cheat code lol. And only on VS mode, on story mode you can't play as Goku period. Might be the only DBZ game that doesn't let you play as Goku on single-player/story mode.

I really don't know if I like Shin Butoden or UB22 better... Shin Butoden is better on paper, but it's so ridiculously unbalanced, and the stages are so small for the split-screen to work... 32-bit DBZ was very disappointing, only Legends is enjoyable to me.

Maybe you never got to learn how to play them.
Butoden 2 and 3 are really good and unique kind of 2D fighting games. If you find them to be slow (fair enough), there's a turbo mode you can unlock easily. There's a reason why Butoden 2 is a fan favorite and continues to be.
Buyu Retsuden on MD is pretty nice, not as good as Butoden 2 and 3 but it's there. Butoden 1 is very clunky, so Buyu Retsuden is like a middle ground between 1 and 2/3.
Shin Butoden on Saturn is abysmally bad, a full missed opportunity, they fucked up in many ways with that one.
UB22 is garbage and not even a Butoden game, doesn't have the split screen mechanic.
