Alternately you could find an old style KVM switch and modify it. This one's old enough to have VGA connectors, AT/XT keyboard connectors (5 pin DIN), and no mouse connectors.
For s-video frequencies it should be fine. You could just drill a bunch of holes in the back or the sides of the case and mount all the RCA/4-pin-miniDIN/SCART connectors/whatever you want on one.
