Isn't that a bit pointless pulling RGB from the board on that model of SNES when it already exists on the multi-out? The only reason I could see for doing this on a non-SNES Mini is if you were going to bypass the internal amplifier and connect to an external amplifier. You may as well hack off the multi-out end of an A/V cable and rewire it for RGB (over BNC, Scart, RCA, D-Sub, whatever your receiver will take) if you're gonna be soldering, anyways.

It's times like this I'm glad I chipped my Playstation 1. Never thought it'd come this much in handy. I only wish it weren't so flaky with anti-mod games like Strider 2 though (Rarely works. I probably botched one of the connections for the 7-wire mod. Probably just going to burn a patched version soon).
