This is actually being worked on. So that will hopefully improve in the future.

90% of systems have 1 BIOS that matters. BIOS pack on the wiki handles all the BIOS shit

Menus are fine, there just needs to be better options for mouse navigation.

All the stable, tested cores like Nestopia, bsnes, Gambatte, Beetle PSX all work fine. Experimental cores like Mupen64plus or Reicast might have some issues.

Because it provides some things that many standalone emulators lack. Like shaders, dynamic rate control for smooth sync, automatic gamepad mapping, full gamepad control, etc. It has a Vulkan driver which can be used for 2D blitting as well as 3D rendering, and will probably be great for low-latency due to low level control over the swapchain.

Or maybe it's getting popular because it does things people want. Like run on Raspberry Pi or 3DS.

Wrong. Mednafen uses it's own unique PSX emulator (currently the most accurate PSX emulator), and RetroArch implements as a core using the libretro API, and has some advantages over using regular Mednafen like on the fly disc swapping and pixel shaders.
