Like the other anon here I would suggest Red or Blue if you've never played them. I don't exactly hate the anime references in Yellow but I do think shoehorning in downscaled anime graphics made it look like shit. The Red/Blue graphics also look like shit, but in a charming way, because they were drawn to look like that.
IMO, top experience is Red+Stadium, followed by Crystal+Stadium 2. And the side games like TCG, Pinball, and Puzzle Challenge are really charming.

Honest recommendation, Crystal is worth it over Gold. Better graphics, better item placement in dungeons, MUCH better phone system, more trainers, and Battle Tower.
Either way, play some Stadium when you're done for additional comfy.

Years ago I used the Nrage plugin with Project64 to do Transfer Pak emulation. These days I think Mupen64plus has it built in. As for getting the saves off your cart and into the computer, there are plenty of solutions but they all require some sort of special hardware or DIY.
