What about needing to restart game if you got Deemer and Alamar and your opponent - Astral and Halon?

Well, there is a lot of assumption going there. In my experience liches are far more accessible. First of all, after you build the mage guild, it requires 3 more structures to get VL, and only 1 for liches. That's 2 more days of either idleness or kiting mobs and killing them with your skeleton stack. Either way, liches can help you immediately.

Secondly, VL are pricier - you need to spend 5k gold and 10 gems and crystals each in total on the dwelling, and then another 2k on hiring 4 VL. Meanwhile liches' dwelling costs you 2k gold, 10 sulphur, and then you need 1650 gold on hiring. Upgraded vampires' build-up is twice as expensive as liches' both in gold and rare resources.

Thirdly, at this stage 4 VL are glorified harpy hags: you need to keep them afar from action, use them to hit-and-run melee units. You can't really suppress any shooters with them since they aren't capable of replenishing their numbers yet. Maybe at week 2 when you get at least 8 VL there's something you can use them for.

Speaking of week 2. Assuming you're lucky and got graveyard built, your build order for days 1-4 is MG, amplifier, estate and upgraded estate. Which leaves you with mausoleum, hall of darkness and citadel on days 5-7. No town hall, no castle, little money to hire black knights (which I strongly believe are considerably stronger than vampires early on). If you you skipped upgrading VL you'd save 1 day and 4k gold (if you still want amplifier, otherwise it's 2 days and 5k gold) which would leave you in a better shape.

Well, for fortress and stronghold it's obviously wyverns (basilisks with Bron is also plausible at the very start) and rocs/behemoths respectively.

With Dungeon there's no obvious solution except maybe amassing trogs & shooters.
