When I was a kid I thought MK was kind of cool because of the fatalities, but the basic controls were bullshit. You know you have a shitty system when you use have to seperate buttons for blocking and running.
One day we went shopping for PC games with the my dad and big brother. We both got a 2-in-1 pack: mine had two Pro Pinballs and his had Samurai Shodown 2 and some other game I can't remember. We played the absolute fuck out of the latter. I mained picture related and Jubei while he used Galford and Genjuro.
After that and quite a lot of Neo Geo emulation there was no turning back from the SNK standards. Much later I played Tekken 3/5 with my friends and was pretty much the best since I was the only one really spent time trying out moves and combos on practice mode.

tl;dr:
Samurai Shodown 2 was the shit.

Back when Mortal Kombat was pretty much the only fighting game I had played (I might have touched Sango Fighters and One Must Fall), our family visited a pc store that had some games in a . I got a 2-in-1 Pro Pinball package (The Web and Timeshock!) which was pretty awesome, but my big brother got a 2-in-1 with some game I don't remember (it was a action platformer and I thought it was Blade Runner, but apparently that's a point-and-click adventure so it couldn't have been it) and SAMURAI SHODOWN 2. It totally changed my image of fighting games in general with the simple controls (when compared to MK's "button for every fucking thing" and retarded command moves), unique characters and beautiful pixel art.
Afterwards my brother introduced me to emulating and since then SNK fighters have been the standard for me. Even though I'm not good at them at all (because of the lack of human opponents (ie. friends)), I still love playing them.
In addition to SS2, I would say Last Blade 2 and Garou: MOTW are my biggest favorites.
