It should be noted, the Genesis makes ridiculous use of dithering, which you'll lose completely with RGB and considerably with S-Video.
Either you get the colormixing that composite/RF give you(and lots of rainbowbanding with it) or clearer text/details and purer colors from S-Video and RGB respectively.

There really isn't much difference. The video signal is exactly the same but it integrates audio onto the same line so there may be a tiny amount of crosstalk introduced.

Not a great comparison image but the only one I could find. I'd make a better one but don't have any CRTs with RF input, only monitors and a plasma.
