Nintendo was hardly the only one. Almost no system had an output of 4:3 with square pixels.
Some developers would include their own test images so you could properly adjust your display.

Japanese computer games used 16:10 for some reason.
Some other games have mods to play them in widescreen resolutions and certain Windows games can inherently be used at varying resolutions and aspect ratios.
