For the first part, Trenchbroom is by far the easiest editor for Quake 1.
https://github.com/TrenchBroom/TrenchBroom/releases
The manual is very extensive, and there is an in-depth youtube tutorial series with dozens of videos in it. After that, for the lava nails and multi-rockets, there is an almost completely unknown mod called Keep in the works. Right now it's in beta 0.56, but is publicly available:

^That is Keep 0.50, and this is the 0.56 patch + a map to showcase the patch:

Keep has lava nails, multi-rockets, all the things from the mission packs, along with almost everything from the Drake mod, and everything from Arcane Dimensions 1.70. It's an enormous mapper's resource that doesn't see much usage.
>I want to mod the Centroid scorpions so they will shoot LavaNails, is this even possible with no coding skills?
You would need coding skills. Sorry m8. There are some QuakeC tutorials around if you want to get into it.
