the moment I heard the starting town theme I KNEW I wanted to connect with this world, it just felt so completely nostalgic and peaceful that I wanted to live there for real.

Turns out connecting with the characters in this game isn't great when the story is so tragic

Something like this is good to start with. Or something straightforward like game boy final fantasy, mystic quest, etc...

Easy, straightforward story, not too many items to get you off track how to develope your hero and maybe a team which has different roles for the party.

Some of these could be overwhelming for a starter

I'd even go so far to wait with chrono trigger until you played something else before, so you can appreciate how good it is

Suikoden is like the motherload of party development, so many chars to choose from

Same goes with Earthbound, I find it's alot better to have played an RPG that 'follows the rules' to see how these games differ from the formula.

Special mentions for things like Secret of Mana/ Secret of Evermore, Breath of fire, Grandia, Final Fantasy/FF Tactics, Lufia, Terranigma, Vandal Hearts etc...

It depends in what way you want to interact with the protagonist/s, turn based, action moves, battle screen, battle field
