Set to either none, or for anisotropic filtering (may reduce some distortion at a distance, at the expense of some performance), depending on what you think looks best. I really dislike biliniear/trilinear filtering for games like these, they should be off by default.

I don't think GothicTX has any GLDefs.

Also I don't know how to do that, but I can however make the brightmaps themselves if someone can either assemble them for me, or point me towards a goodtutorial which will tell me how to do so.

The original game was set at 35fps with an internal timer to run consistently and with stability on all kinds of computers.
Later sourceports can let you play with uncapped framerate though, such as GzDoom (make sure to put on Doomguy's glasses)

Crispy Doom is nice for just the standard game, but it offers a bunch of nice optional things you can toggle as you please (double resolution, a crosshair, color fixes for caco's and baron's blood, etc, etc).

GzDoom has its flaws, but it's moddable as hell, and can be adjusted to look fairly authentic (there's a smear filter enabled by default, because the lead dev has bad taste, but it's easy to toggle off).

You could go for mouse aiming (turn off auto-aim while you do, because they sort of clash, IMO). Save mods for Doom 2 and Final Doom

If you want a fancier looking Doom, there's always Smooth Doom. Consider this also.

You can disable texture filtering in GZDoom, yes.
Also, I recommend at least trying out the Brightmaps, because they actually look extremely good.
