Punch out does this by stacking a whole group of 8*8 (I reckon they're actually 8*16) sprites, creating what's called a "metasprite". As such, there's a reason why you only fight one boxer at a time, and why they either upper cut or punch forward. A swing would be too wide to render, causing flicker. Popinski and Macho Man also do swings, but notice the use of foreshortening on some of his sprites.

Mario in SMB1 is a metasprite that is made up of four 8*8 sprites in his small form, and eight 8*8 sprites in his big form. His fireball is a single 8*8 sprite.

Regarding Star Radish, do you have any proof that it is indeed an NES game? Maybe a thread on NESDev or a link to the ROM?
