I prefer the new graphics. The old ones are good on their own, they're iconic, but they're good on the NES; a recolored version doesn't look better than the existing All-Stars overhaul. (even if it wasn't as good as SMB2's)

SMB1 and Lost Levels (SMB2J) have slightly different physics on All-Stars, in the NES original versions you'd bump back down when you hit a block as big Mario, on All-Stars you can jump through them when you break them. That's it, not really a big deal but some people consider them inferior because of that.
SMB2/USA/Donkey Donkey Picnic is probably the best updated version on All-Stars due to great visuals, new background graphics and the game plays identical.
SMB3 is also pretty good, the visual overhaul doesn't feel as prominent as on SMB2, but it does have more detail than the NES game, still it's hard to tell if it's actually better or not, ultimately it's almost the same.

SMW on All-Stars (bundle-only version) has a different sprite for Luigi instead of a Mario color swap.

GBA versions are technically inferior (cropped screen, worse sound quality) and adds some things that not many people are fond of (Martinee's Mario voice), but they have extra levels and challenges, they're good if you want to play a handheld version of the games with extra content, but they're not better than the originals.

I actually really like the new graphics on SMB1 and 2.
SMB2(USA) got the best visual overhaul though, it looks gorgeous.
SMB3 looks good, but some artistic decisions are kind of weird. Like they took out the unique onion-shaped clouds and the transparent figures on the sky that made the game have such a dreamy feel, same with the underground sections and that "outer space" background, and the sort of icy/metallic ground terrain, they were changed in favor of a more "realistic" underground setting. Not bad looking, but less unique.

I think the aesthetics on 1/LL is nice, I like the new backgrounds, although it's the least impressive one compared to the other two, also kind of disappointed that they didn't make the slight graphical changes the original SMB2J has, both use the exact same assets. But all in all I think it looks like a good effort, or at least not ugly.
