Yes! I know exactly what you mean. I have found that you occasionally get decent "continents" maps with a water percentage right around 51%, but sometimes I have to regenerate maps for like an hour before I find one I want to play on.

The alternative is to use heightmaps. I play a lot of games on Japan heightmaps because it's good RP fodder and because it has a good mix of large and small islands. Another thing I have considered is finding another program to procedurally generate heightmaps (another game perhaps) with the characteristics I want, but I haven't had any luck with that yet. Nothing playable anyway.
