All the characters are great, this is peak char design in fighting games.
Demitri is a favorite of mine, as is Bishamon and Pyron.
However, my absolute favorite is not Morrigan, but Lilith.

I once read somewhere that all the 3 new characters for Marvel Vs Capcom 2 (Amingo, Ruby Heart and SonSon) where created for a new Darkstalkers game but the game was canned, SonSon of course being the granddaughter of the original SonSon.

Gameplay wise I like sasquatch and qbee. Design wise I think huitzil, lei lei, and lilith are my favorites, honestly there's not a design I don't like.
