It's true, the JPN/PAL revision of RE4 buffed the knife's damage by 100%. The Wii port buffed it another 30% when not using the waggle function (it actually mentions this in the manual), and that's carried over to every port since.
You can go knife Ganados on professional mode in the opening village to verify:
NTSC GC RE4 = 10 knife hits to kill,
PAL GC RE4 = 5 knife hits to kill,
NTSC Wii RE4 = 4 knife hits to kill
