No, not really.
Only graphically.
FF7 was special in the sheer volume of high-production-value content, spectacle, and elaborate storytelling, but the actual gameplay is only modestly refined (with apparent influence from the streamlined babymode RPG, Chrono Trigger). The classic Final Fantasy formula was otherwise unchanged by FF7. If you like the gameplay in FF7 beyond the spectacle, you'll probably like the SNES games. Meanwhile if you're a major storyfag who routinely makes comments like "nobody ever plays JRPGs for the gameplay" and tests at Ira Glass levels of testosterone, you'll probably prefer IX and X.
