Sounds like you highly value variety, but I don't think it's all that important. There's maybe 20 pokemon that are very viable choices for a team and this is plenty for the construction of different teams with different approaches to winning. If anything I prefer the limited selection of pokemon as the game becomes more about outplaying your opponent rather than memorizing a billion different gimmicks that appear once in a blue moon (not like later gens are super diverse or anything). I'm not a fan of stuff like hidden power erasing former hard counters and in general in later generations you're gambling with movesets and pokemon choices moreso than simply outplaying your opponent. Also I like how you slowly wear down your opponent's team in RBY rather than one-shotting stuff or going through super prolonged stall wars. The stat exp system helps with this balance. There's some randomness in the battle system but it's interesting to calculate the probabilities to maximize chance of victory and the better player will generally win over a longer series despite the randomness. Also despite all the hate it gets online I think the quirks of the RBY battle system are fun to utilize e.g. hyper beam not needing to recharge after a KO and delayed counters.
So if I played with "only gen 1 pokemon allowed" in a later gen I'd just be playing a dumbed down version of a battle system I already don't like. I'll stick to something I find fun.
