here's an old list of Saturn stuff to get you started. Bulk Slash is not in there but it's a must play. It was only released in Japan but you can get by with minimal to no knowledge in the language. I just use my phone to translate the menus and controls.

The Saturn has the best version of Policenauts. It's been translated to English and I've been playing it using the Saturn's lightgun.

Magic Knight Rayearth, Battle Garegga, DonPachi and DoDonPachi, all the Panzer Dragoon games, Bulk Slash, Knights into Dreams, House of the Dead, Virtua Cop and Area 51, Strikers 1945, Gunbird, Sengoku Blade, Steam Hearts, the best version of Policenauts, Resident Evil has an extra mode but doesn't have auto-aim.

As a kid I had a lot of fun with Mega Man 8, Tomb Raider, Sonic R, Clockwork Knight and Braindead 13.

If you include the ram cart and the hundreds of quality games that just never made it over here, it's even better.
Otherwise, you're talking about maybe a dozen or so must haves for NA.

my personal favourites are baku baku animal, nights, and the panzer dragoon titles, but here's the full list
highly recommend importing any titles that don't have copious amounts of text (unless you can read the moons)
japanese saturn games are both cheaper and easier to find
