I admit I haven't played very many PWADs, but here are the levels I've played that I remember the most:

Map 06: Noir, from Darch's Preacher.wad (2018), pic related. This entire PWAD is great and worth looking at, but this level is my favorite. Notice how the level is wide-open, but it's not a single arena. It's divided up by hallways and rooms, but there are no doors, except to secrets and the exit. The gameplay is excellent. The map is filled with low-tier enemies, and ammo is spread out very thinly across the map, so you have to keep moving or you will run out of ammo, but the sheer number of enemies means you get punished hard for trying to go TOO fast. This PWAD is Boom-compatible. I recommend running it in GLBoom+, so that you can see the demos that come with the PWAD, and because the maps look a LOT better with OpenGL.

This video is in software rendering mode, which I don't think does the map justice, but this player's shtick is he always plays keyboard only, with software rendering, and with OPL or GUS emulated music. I'm gonna record my own videos of this PWAD eventually, but the only thing getting in the way of that is map 09: it's insanely hard, and over 40 minutes long!
I highly recommend you play this one, either skill 1 pistol-start no saves so you can breeze through it, or skill 2 no saves if you want to spend a little more time on it!

Software rendering looks better on classic maps designed with software rendering in mind. It looks like crap on maps designed for OpenGL lighting, and everything is way too dark to see.

I haven't used that; doesn't it reduce your resolution? Again, good idea for early maps, bad idea for a really good looking map. GZDoom with 0 mods should look identical to GLBoom+. I recommend adding Perk's Hi-Res SFX to you mod load order BEFORE Preacher.wad so that Preacher's few unique sounds will override the mod's sounds where it needs to. Or don't load any mods at all. I just like PerK's sounds; they are the same as Doom's sounds except higher quality
