Morrowind is one where we REALLY get into some roleplaying. A lot can be said about this game.

Just you on your own in this game, but character customization and speccing is very involved. Any race can be any class, in fact you don't even have to stick rigidly to classes, you can plain define your own by selecting which skills you want to specialize in at character creation, which attributes to prioritize, and if you prioritize combat, magic, or stealth.
Races have some perks and drawbacks, usually small ones, and usually in terms of some attribute or skill boosts, but there's more significant ones such as inherent resistances, or equipment limitations, and thus certain races are just a little bit better suited towards certain things. However you can ignore perks and drawbacks of racial choices and still build a good character, Orcs and Redguards (Basketball Americans) are less suited towards being spellcasters, but they can still become good at it by just effort, likewise, Bosmer (little twink elves) are less suited towards being strong and resilient warriors, yet can achieve it with hard work.

Morrowind gives you quite a lot of options to handle quite a lot of things, you can even play as a character who tries to avoid combat, and instead tries to approach problems through diplomacy or subterfuge when possible (and there's many, many quests, a lot which involve no combat, or can be resolved without it). This sets it apart from Baldur's Gate, where violence is the common solution to a problem, or Diablo, where violence is the only solution. Even if you play as a straight forward warrior type who hacks up whatever aggressive wildlife gets in his way, it's useful (and satisfying) to approach some problems through alternate angles.
