Varies from stage to stage and to some extent who you're playing as if you're playing Legacy of Darkness vs Castlevania 64. As far as the 3Dvanias go, the N64 games are pretty much the most like the Classicvanias, but such a definition would include games like Simon's Quest. If I remember right, the first half of the game alternates between levels that require you to look around the place like an adventure game and ones that are more A to B leaning harder on the platforming, then the second half gives you more and more of the latter.

This is actually something I would nitpick LoD in general on, it'd be nice if all the characters had more character-specific abilities instead of just tweaks here and there.

But yes, werewolf form gives you big dick offense and defense AND let's you run while you throw out your main attack, at the cost of not being able to turn it off outside of cutscenes. I wouldn't say that you should be too stringent about using it, but once you reach the Clock Tower level, you should save up on crystals for Dracula, you're probably going to need that shit.
