Probably the closest thing the PS1 has to Starfox, and the little Resident Evil-lite segments between missions are neat. The characters are pretty fun, too.

Vanark is the closest thing the PS1 has to Starfox. The in-between mission segments that turn into a quasi Resident Evil system are pretty neat too, if a bit extraneous.

Check out Vanark. It's essentially Star Fox on the PS1, with weird Resident-Evil-tank-control sections between missions.
