If classic Sonic games were ice cream flavours,

Sonic 1 would be french vanilla (a smooth, sophisticated original classic)
Sonic CD would be strawberry (the "zazzy" choice)
Sonic 2 would be regular white grocery store vanilla (the original classic streamlined for mass appeal)
Sonic 3K would be double chocolate (deep and decadent, with lock-on brownie chunks)
Sonic Mania would be a banana split with a scoop of all the above flavours, plus marshmellow whip and sundae sauce
Knuckles Chaotix would be rum raisin (objectively the worst, but ultimately it's still ice cream/classic Sonic)
The Game Gear games are a box of ice cream sandwiches
