Vagrant Story is a reliable choice. It's basically the peak of what you could do with "native" realtime tricks and makes the most of not only the system's strengths but also it weaknesses. For example, the approach to texturing makes their ridiculously low resolution look GREAT somehow, avoiding that muddy low color depth texture/shading artifacting you see in lots of late PS1 games.

From a technical side is very interesting. It used almost every realtime 3D trick the PS was capable of: buffer effects for motion blur, duplicated geometry for depth of field and rim lighting, the works

It all depends on the game, Tekken 1-2 look like shit but they were probably shitty even for it's day, but games with great art that use hardware well will always look good, there's nothing "dated" about them.
