>Download latest version of GZDoom
>unzip and install
>right click any .wad or .pk3 you want to play, chose to run with GZDoom
>chose whatever iwad you want to play (doom, doom2, heretic, hexen, or whatever)
>in the game, configure controls, sound and graphics to how you want
>(this is very easy, just adjust volumes to how you want, pick a resolution that you find looks good, while still running smoothly on your computer
>controls are essentially just what button you want to do what, as in, W for forward, S for backwards, A for left and D for right (just an example), as well as if you want to aim with your mouse, in which case you adjust that to a sensitivity you find feels right for you

It's pretty simple to get the hang of.
If you wanted to play say, Brutal Doom with a custom level set, say, Hellbound, you can make a shortcut to GZDoom, and add to the commandline of that shortcut the .wad filenames (as long as they're in the same folder)

It'd look a bit like this
C:\Games\GZDoom\gzdoom-bin-1-5-06\gzdoom.exe BrutalDoom.pk3 Hellbound.wad
And then at the prompt you'd pick Doom2.wad (most levelsets tend to be built on Doom2)
