doa 1 xbox is just the saturn version in higher resolution, but still uses the saturn models.
saturn version is very barebones but the only cuts were character polys and 3d stages, so its very faithful as a port.

ps1 version had new models made from scratch, and they end up looking worse than saturn.
literally everything in ps1 was changed, even the stages and music however the sheer amount of extras make it the best version unless you want an arcade accurate experience.
