I'm very biased toward the amazon, so take what I say with some salt. It's my favourite class. The regular builds are:

>physical bowzon, which uses a single shot tracking arrow, a magic arrow for physical immunes and either strafe which machine guns or multishot which fires a fan of arrows. The build plays similar to the zeal pally, but ranged and with a little more complexity and flair. Weak but my personal fav.
>elemental bowzon, which uses fire and/or ice based arrows. This can be combined to a fire/physical or cold/physical with the above.
>javazon, which uses javelins and the skills charged strike which is similar to the vengeance paladin, high damage single hit, it's perhaps the hardest hitting single target build in the game...as well as the skill lightning fury which throws a small lightning bolt that explodes into dozens more and targets all nearby enemies. Another of the most powerful skills in the game.

These are all supported with a summon, the Valklyrie, which is the best tank in the game. Also the passive skills tab, which gives things like crit chance, attack ratting, piercing shots and dodge abilities.

Now the barb however you'll probably find even more boring than the zeal paladin. They're also significantly harder to start with. The standard builds are:

>Frenzy. Two melee weapons and upon attacking gains movement speed and attack speed. Moves very quickly between enemies bursting down single targets quickly. More fun than the zeal pally mostly because it's much faster.
>whirlwind is the most fun barb skill. Constantly moving, it deals damage in a small aoe around the player as you spin to move.
>shout barb uses the war cry skill to aoe damage enemies by yelling at them. Not amazing with damage, but is fun and has a lot of control and buffs with the different shouts
>concentrate or berserk. Both similar high damage one target attacks. Concentrate buffs defense and berserk sacrifices it for more damage.
