And besides, dithering was used even up to the early 00s to fake more colours.

RGB Scart and expensive upscalers will only amount to the games looking like they do on unfiltered emulator output.

Lot of games actually use composite to mask things or add more colours or do transparency, using RGB ends up detrimental for those.

CGA games nearly all took advantage of composite dithering. Sonic 1 and Streets of Rage 2 took advantage of it specifically. C64 had a dozen different software techniques for doing multicolour hi-res, many which relied on the RF or Composite signal blurring the video. But even normal games tended to use combinations of colours that ended up better looking due to composite blurring.

You are objectively missing out on all the things that the coders and artists did to take advantage of the composite video signal to produce more detail and more colour.

Composite on a shadowmask is the best choice since games were DESIGNED with those in mind.

Since some games like chrono trigger were made with the blur of crts in mind, does that mean I have to use lower quality cables like composite to get the most accurate colors and picture as possible, or will it be fine as long as it's a crt? Kinda new to crts.
