Well, I could tell you go open up Strife.wad with Slade, and to look at the textures and sprites there. They did some stuff as pre-rendered 3D, and some as stock textures, but if you look at the handdrawn stuff there, it's actually quite incredible, it's very consistent, the shading and lighting is very clean, the palette is used expertly.
In Doom, if you look closely at the sprites there, you can spot a little bit of color banding here and there, just a little, but it's there, most noticeable on some of the gibbing sprites, which are slightly lazy (but workable). For Strife's gore, there's no such shortcuts, it's all very expertly shaded with no banding or color bleeding. The way sparks and lightning light up some of the sprites also looks very clean.
There's also a lot of frames which, again, are very consistent in their motion and positioning, which makes all the hand drawn animation look very smooth and clean. Doom also actually has fairly smooth animations as is, though the sprite offsets there are pretty sloppy, thus they can look more choppy at times than the animations actually are (the Spritefixing project lets you fix that).

A neat thing is that Strife also used a palette trick to render certain shades and colors at fullbright, like Duke Nukem 3D, so you get certain elements glowing in the dark, so to say. Strife does take a couple of shortcuts here and there, but the artists did a pretty good job of covering that up.
