Gameplay was awful but I still love them for the visuals, style, premise etc.
I can think of only one exception - Road Rash plays wonderfully too. It's also pretty 3D-ish, but the reason it excel I think is that corners aren't the difficulty itself, but numerous obstacles you have to avoid is. And it isn't very hard, but still interesting because you race real opponents, not the timer.
Yep, Outrunners is one of the best of this kind.

I dunno, to me Outrun 2049 looks so much worse than other Outrun games. Totally uninspiring visuals.
Road Blasters on the other hand implemented futuristic setting nicely.
