As far as I'm aware there aren't really any differences between the versions of 1, although I think the Jaguar version had a different version of the soundtrack and a breakout minigame. Assuming you aren't even thinking about the GBA port, so ignore it.
For 2, I believe Dreamcast, however I've heard people say PC. I haven't played that one so I can't say for certain. N64 is acceptable for the most part if you don't have access to the other two (I think). The PS2 version adds an open hub world instead of a map screen and messes with the artstyle a bit, wouldn't recommend for a first playthrough. Stay away from the PS1 version, it's missing a load of content (levels are gutted and there are only 800 lums instead of 1000). DS and 3DS are ports of the N64 and Dreamcast versions respectively as far as I'm aware, don't bother with them.
